Ingredients:
- 1–2 packages smoked sausage or kielbasa, sliced
- 3–4 red potatoes or sweet potatoes, diced
- 2 bell peppers (any color), sliced
- 1 zucchini, chopped
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Optional: sprinkle of shredded parmesan or red pepper flakes
Directions:
- Preheat oven to 400°F.
- Line a large baking sheet with parchment paper or foil.
- Add all chopped veggies and sausage to the sheet.
- Drizzle with olive oil, sprinkle on all seasonings, and toss to coat everything evenly.
- Spread mixture out into a single layer.
- Bake for 30–35 minutes, flipping halfway through, until potatoes are soft and edges are golden.
