Slow Cooker Beef Stew

Ingredients:

  • 2 lbs beef stew meat, cubed
  • 4 cups beef broth
  • 3–4 large carrots, peeled and chopped
  • 3–4 potatoes, peeled and chopped
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp cornstarch + 2 tbsp water (optional, for thickening)

Directions:

  1. Add stew meat to the slow cooker. Season with salt and pepper.
  2. Add carrots, potatoes, onion, garlic, broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaf.
  3. Cover and cook on low for 8 hours or high for 4–5 hours, until beef is tender and vegetables are cooked through.
  4. To thicken, mix cornstarch and water in a small bowl and stir into stew 30 minutes before serving.
  5. Remove bay leaf, stir, and taste before serving. Adjust seasoning if needed.
