  • 4–5 medium potatoes, diced
  • 1 bag of baby carrots or 4 large carrots, peeled and chopped

  • 2–3 tablespoons olive oil
  • Garlic powder, salt, pepper, and smoked paprika (season to taste)

  1. Preheat oven to 400°F.
  2. Line a baking sheet with parchment paper or foil (less mess = more yes).
  3. In a large bowl, toss all ingredients with olive oil and seasonings.
  4. Spread evenly on the baking sheet—try not to crowd so everything gets crispy.
  5. Bake for 35–45 minutes, stirring once halfway through, until potatoes are golden and carrots are tender.
